1 tbsp olive oil
3 tbsp Chinese chilli paste
3 tbsp ginger and garlic chopped
1 large red pepper chopped in long thin strips
1/2 cup hot water
handful spring onions
1 tbsp cornflour with 1 cup water (mixed well)
1/2 tsp Sichuan pepper
300g firm tofu chopped in cubes
1 tbsp sesame oil
Fresh coriander leaves
1. Heat non-stick pan on medium flame. Once the pan is hot, add the oil, chilli paste, ginger, garlic, red peppers and hot water. Mix all well and let it cook for 30secs.
2. Add spring onions and cornflour mixture. Cook for 2 minutes.
3. Add the pepper, tofu and mix well. Simmer for 2minutes.
4. Drizzle sesame oil and garnish with fresh coriander leaves. Serve hot and enjoy!
