Protein Bars

My turmeric protein bars. Perfect for immune boosting and keeping the naughty cravings at bay!


Turmeric Energy Bars – Makes 35-40 pieces


1 cup Unsulphured apricots

2 1/2 cups pitted medjool dates

2 1/2 cups cranberries

1 1/4 cups figs

1/4 cup pumpkin seeds coarsest grounded.

1 tsp fennel seeds (optional)

3⁄4 cup sun warrior classic protein powder

1 3/4 cups coarsely cut cashew nuts

1/4 cup chia seeds soaked in 3tbs water or fresh orange juice.

3 tsp vanilla extract

2 tbsp organic maca powder (optional)

3 tbsp turmeric powder

1 tsp cinnamon powder


Toppings

Calendula petals

Fennel seeds

Lavender petals

Handful chia seeds

1⁄2 cup coarsely cut cashew nuts


Method

1) In a food processor add dates, apricots, figs and cranberries. Blitz until there is a smooth paste. Add rest of the ingredients and mix well.

2) Place the mixture into a baking tray and press down to form bars. Sprinkle with calendula petals, fennel seeds, lavender petals, chia seeds and cashew nuts mixture or any other seeds of your choice. Press down to secure the toppings.

3) Place in the fridge for around 2 hours to set well. Cut into bars or squares and enjoy!


You can substitute the dry fruits, seeds and spices to whatever is available in the house!
