Passed down from my late mum, Pramilaben, this recipe is a Diwali favourite that everyone absolutely loves. Crispy, flavourful, and perfectly spiced, it’s a must-have for your festive celebrations!

Ingredients

  • 1 kg rice flour

  • 1 bowl of gram flour (besan)

  • 180 g butter

  • 4 tbsp ginger paste

  • 1 tsp turmeric powder

  • 2 tbsp green chilli paste (adjust according to your taste)

  • 2 tbsp sesame seeds (optional)

  • 3 tbsp sugar (optional, for a hint of sweetness)

  • 5 tbsp lemon juice (adjust according to your taste)

  • 2 handfuls fresh coriander, finely chopped

  • 1 tsp cumin seeds

  • Salt to taste

Method

  1. In a large mixing bowl, combine the rice flour, gram flour, and butter until the mixture becomes crumbly.

  2. Prepare the green chutney masala by blending the remaining ingredients (except sesame seeds) into a smooth paste. Adjust the flavours so it’s perfectly balanced - sweet, spicy, and tangy (khato, mitho, thikho).

  3. Mix the chutney masala and sesame seeds into the flour mixture. Add a little water if needed to form a smooth, pliable dough.

  4. Using a chakri maker, shape the dough into traditional spirals.

  5. Fry on medium heat until golden brown and crisp.

  6. Drain on paper towels and allow to cool completely before serving.

Tips & Tricks

  • For extra crunch, ensure the oil is at medium heat; if it's too hot, the chakris will brown too quickly.

  • This recipe is perfect for Diwali or festive gifting. Store in an airtight container to enjoy for weeks.

  • You can adjust the spice levels by adding more or less green chilli paste.
