Handvo Recipe

1/2 cup semolina flour
1/2 cup chickpea flour
1/2 cup wheat flour
3 tbsp jaggery
1/4 cup chia seeds
1.5 turmeric powder
1 tsp coriander powder
2.5 tsp salt
2 tbsp ginger paste
1 tbsp garlic paste
1 tbsp green chilli paste
1/2 tsp chilli flakes
Juice of 1 lemon
1 bottle gourd grated
2 medium carrots grated
1/2 cup water
1 cup yogurt
3 tbsp oil
1.5 tsp baking powder
1 tsp eno
Tempering
2 stems curry leaves
2 Dry red chillies
3 cloves
3 Cinnamon sticks
1 tbsp olive Oil
2 tsp Sesame seeds
Garnish
Black sesame seeds for sprinkling.
Bake
Bake the handvo for 45-50 minutes in a hot oven at 180 degrees.
This is a teatime favourite served with masala chai. You can subs the bottle guard with other vegetables like grated potato, courgette, onions, spinach, kale etc.
