Purple Broccoli Salad

serves 2


5 handful purple broccoli or any broccoli of your choice

1 tbsp olive oil

Few leaves wild garlic

3 tsp zatar

For the dressing

Handful wild garlic or 4 garlic cloves

1 whole avocado, peeled

4 tbsp lemon juice

1/2 cup water

1 tsp chilli flakes

2 handful desiccated coconut

1 handful pumpkin seeds

1 heaped tsp tahini

1 tsp Himalayan salt or as per taste

Handful fresh parsley finely chopped

Garnish (Optional)





1. To make the dressing, add all the ingredients in a smoothie maker or blender and blend until smooth paste. Taste and adjust the flavours accordingly. Keep aside.

2. Heat a non-stick pan on medium flame and add olive oil. Once the oil is hot, add wild garlic, broccoli florets and zatar.

3. Cook for 2-3 minutes only, this is to warm the broccoli.

4. Switch off the gas and keep aside.

On a serving plate, spread the avocado dressing all around, followed by sprinkling pomegranate, zatar, pistachios. Next add the broccoli salad and enjoy!
